This is a super fun project that can be very simple and sporadic, or planned with more structure. When the leaves are changing colors and starting to fall, go out and collect them. See how many different colors you can get. When you have a good variety, try to make a rainbow with them. This shows that while many of them may look orange, there any many variations. Some will seem in between colors and your child can determine which color is seems like most to them. Sometimes we see things differently, and that's okay!
If you want to take this further, you can use contact paper, or tape, to place the leaves in rainbow order. We've done this, and had it up as an on-going project. This was on our plexiglass board, and I painted the back side for them to match the colors where they thought they best fit.
